Courtney’s Recipes - Old Bay Heaven
This is Courtney's Old Bay and Ranch Chicken Salad with Grilled Corn and a Seasoned Baguette. Courtney cooked this for dinner the other night and the whole house smelt amazing! This is a perfect summer dinner idea that Old Bay seasoning lovers will die for! Courtney loves inventing dishes at home with super simple ingredients and easy steps! If you do not have an air fryer, this will certainly inspire you do get one.
Ingredients -
- Frozen or fresh corn on the cob (Courtney used mini extra sweet cobs)
- Chicken
- Spinach
- Ranch
- Baguette (Courtney used a mini one from Trader Joe's)
- Old Bay seasoning
- Olive oil cooking spray
- Optional garlic salt and Italian seasoning
Cooking -
Courtney likes to cut the corn on the cob in half because the flavor cooks into the corn better. Spray the corn with your olive oil and season with lots of Old Bay. Grill in your air fryer for about 10-15 minutes.
Courtney placed a frozen mini baguette also into the air fryer with the corn but the bread only needs about 3-5 minutes. Courtney seasoned her bread with olive oil, garlic salt, and Italian seasoning.
Spray your chicken and non-stick pan with your cooking spray. Season your chicken with Old Bay. (Old Bay is not super high in sodium so Courtney recommends also adding extra salt on your chicken for more flavor) Pan sear the chicken. Once fully cooked, place on top of your spinach and drizzle with ranch. (Courtney even added extra Old Bay on top of the finished salad)
