Courtney’s Recipes - Lemon Pepper Dishes

 Lemon is the classic summer flavor you can make savory or sweet! This post will feature two of Courtney's favorite savory lemon pepper dishes! Most people probably think of lemon pepper chicken, especially Wingstop's delicious lemon pepper wings. But now get ready to embrace the foodie inside of you and try something new, delightfully refreshing, and extremely satisfying!  

This first recipe is a Lemon Pepper Shrimp Pasta with Sun-dried Tomatoes, Spinach, and Parmesan cheese. 

Ingredients -

- I used frozen shrimp from Trader Joe’s 

- Lemon pepper seasoning (I use some from the brand Old Mansion) and lemon juice 

- Olive oil 

- Sun dried tomatoes from Trader Joe’s 

- Spinach 

- Butter

- Parmesan cheese 

Optional - Lemon zest and garlic powder 

Cooking -

Pan sear the shrimp in olive oil, lemon juice, lemon pepper seasoning, with optional extra salt for about 1-2 minutes on both sides (many people over cook their shrimp) 

Next sauté the sun-dried tomatoes and spinach together in a pan with olive oil, salt, optional lemon zest and garlic powder 

When your noodles are done cooking, in your serving bowl, mix together the noodles and the spinach-tomato sauté. add in your butter and olive oil 

Top the pasta with your shrimp, parmesan cheese, optional lemon zest and garlic powder 


 

This second dish is a Lemon Pepper Salmon on a Pesto Salad with Garlic Bread. 

Ingredients -
- Frozen salmon (I get from Trader Joe's) 
- Lemon Pepper seasoning and lemon juice 
- Olive oil
- Half of an onion 
- Pesto sauce 
- Sourdough Bread
- Garlic and Italian Seasoning 
- Salt

For the salmon - I drizzled olive oil, lemon juice, and lemon pepper seasoning 
- Next I grilled it in the air fryer for 10 mins (the time varies on the size of your salmon)

For the salad - mix together spinach and pesto sauce (you can make your own or find a premade one at any grocery store)
- Next I sautéed onions in olive oil and salt to add on top 
- Add more lemon juice and some salt on top of the finished salad

For the bread - once toasted, drizzle olive oil and season with garlic and Italian seasoning
