Courtney's Favorite Breakfast Recipe - Avocado Toast Inspiration
I could eat avocado toast for breakfast, lunch, and dinner! If you are like me and want your meals full of flavor, here are some ideas to upgrade the boring standard avocado toast at home!
Let's start with the bread. I use sourdough bread from Trader Joe's. Trader Joe's sourdough bread tastes 100 times better than sourdough from a regular grocery store. When it is time to cook, I always like to pan fry the bread. Drizzle or spray down your favorite olive oil or cooking spray than lay the bread on top. Drizzle more olive oil on the side facing up now. Turn the heat on and flip the bread once the side down cooking gets to the golden brown you desire.
The next step is the eggs which I love mine cooked sunny side up. The runnier the yolk... the better! But you can cook the eggs anyway that you like! Sometimes I use pesto sauce (you can find a premade one at your local grocery store or make your own) instead of olive oil to cook my eggs which adds amazing flavor to this recipe. While the eggs are cooking I sprinkle a little bit of salt on top of them.
While the eggs are cooking I cut up half an avocado and spread it on top of my pan fried bread. I drizzle a small amount of olive oil or pesto sauce on top of the avocado on the bread. Next I squeeze lemon juice and sprinkle lemon zest on top of the avocado. After I sprinkle a small amount of garlic seasoning.
Finally, I put the eggs on top of the toast I just prepared. I add a little extra lemon zest and everything bagel seasoning on top. I find that all the flavors go amazing together and tastes restaurant quality!
